Nana's Cookies

Well, I finally decided to share my grandmother's super secret recipe with the world. It's just called Nana's cookies. My family and I have cherished these cookies for decades and they are made for every occasion. They are great breakfast cookies (even dunked in coffee), great snack cookies, and even better dessert cookies. They are plain looking, no fancy sprinkles, jelly or other added toppings are necessary, although sometimes my Italian grandmother likes to put an entire hardboiled egg atop some of them at Easter time! The recipe is as follows:

Nana's Cookies

4 eggs
1 cup sugar
1 cup vegetable oil
1 tsp. vanilla extract
1 1/2 tsp. baking powder

Add your choice of gluten free flour a little at a time until it makes a dough.

Break off a piece of the dough and roll it with your hands about 5 inches long. Bend the strip of dough in the center and cross the dough over itself twice so it makes a "twist shaped" pattern. Place on a lightly greased cookie sheets. Bake at 325 degrees until there's a pink tinge on top, about 15-30 minutes. This will make approximately 30 cookies. This is actually half of the recipe. We usually double it.

Sounds yummy! I love the fact that the ingredients are so simple. I will definitely try it some time soon. Is it easy to twist the dough (especially with GF flour)?

It's not as easy as with other types of dough, but the twist is very "loose." :)
