Our simple yet tasty oatmeal recipe is a great way to start the morning. It's very filling and a slight twist on your traditional boxed oatmeal. You can use any dried fruit you might have around as a quick substitute. We've used apples, raisins, craisins, blueberries, and the list goes on.
Ingredients:
- 1 C gluten free rolled oats
- 1 C rice milk
- 1 C purified water
- 1 TBSP brown sugar
- 2 dried apricots, chopped
- 2 TBSP dried apples, chopped
Directions:
- Combine rice milk and water in a small pot, and bring it to boil.
- Add oats and brown sugar into boiling liquid, then turn the heat down to medium high.
- After cooking them for a couple of minutes, add the dried apples.
- Cook for another few minutes and add the dried apricots. Continue to cook until the oats are desired consistency.
- Serve immediately. The total cooking time is about 5-10 minutes depending on your preference of oats consistency.
Notes:
Makes 2 small servings, or 1 large serving (as shown in the photo).
