I finally found it! GF Bisquick! When I wasn't looking for it, it was everywhere, and when I actually wanted to try it, I couldn't find it. I ended up finding it at Shoprite-- not at a specialty store!

So, I combined the basic ingredients to make pancakes (although you can make waffles and biscuits as well) and I immediately noticed that it was incredibly thick. It looked like the paste you used in Kindergarten in the 1980s. I had to add a little bit of water to the batter to make it a little thinner before adding the batter to the pan. Maybe that consistency of the batter would have been good for waffles or biscuits, but not for pancakes.... Still, the batter was really thick when making my pancake lumps.

After cooking for about 4 minutes on each side, the familiar aroma of pancakes filled the air, and I was really excited to try them-- regardless of how much they looked like bricks!

Whoops. Swing and a miss. Cooked them on too high of heat. The outside was a too crunchy and a bit burned and the inside was a little too runny. Second time's a charm? Lower the heat and cook for about 5-6 minutes on each side.

YES! I'm eating pancakes again! They actually taste like the old bisquick pancakes. They have a little bit of a crunch on the outside and are fluffy on the inside! With some gluten free syrup, this is a great breakfast. I'm really curious about making the waffles and biscuits now. Anyone give it a try?
