Hi All! New member here from Just north of Atlanta, GA. I am Colleen Wheat, married, two college age kids and one spoiled cocker spaniel. I am gluten free for about two years and in the process of removing other foods from my diet as well to see what I can do to help myself feel better. Looking forward to these forums and the website. :)
Welcome to the Gluterra community! Glad to see another Atlantan on these forums :)
I've been cooking mostly dairy-free and egg-free as well as gluten-free for a few years now. It gets more challenging when you start to eliminate multiple foods but it is certainly manageable. Hope you will find helpful information on this site!
Hi Colleen!
Great to have someone else to communicate with here. What other foods have you removed from your diet?
So far my darling hubby and I are eating mainly meats, veggies and fruits. i am more strict in that I have (tried) to cut out caffeine, sweeteners, nuts, tomatoes, peppers, eggs, alcohol and dairy. Now, I say mainly because I am human and occasionally eat things I am trying to avoid. In the past fifteen years I have been diagnosed with both Rhuematoid Arthritis and Fibromyalgia (Please excsue, misspellings). I have bben exhausted and achy to some degree since our daugher (now almost 18) was born. Medicines have proven ineffective and have had so many side effectives. I have only been on the new eating plan for about 12 days but have been feeling better, so much better! I have about tenpounds I need to lose and my darling husband quite a few more than ten. He is already feeling better and losing weight as well. The gluten-free lifestyle was the first change I made in my eating. Darling Hubby never made that cahnge, but has embraced the "Paleo" lifestyle to such a degree! We are blessed becasue our children are mainly at college, so we just have our own palates to please. I do think much of the "feeling better" has to do with eating no-processed foods and cutting caffeine. I have done sme research and found out that sometimes a body will recognize caffeine as gluten. I have had a lot fewer "Issues" since cutting the caffiene, though that and the nuts are the most difficult for me.....Okay, way more thn y'all wanted to know!! :-)
Wow, your diet is much harder than my husband's! It's great to hear that you are feeling better with your new diet. Eliminating tomatoes and peppers are something I haven't heard, so I looked it up and found many articles talking about "nightshade" vegetables. Very interesting. I assume that you are trying to avoid them because of your arthritis?
Yes. I am trying to see what (if any) foods make my arthritis/fibro worse....so far, feeling much better without these items. Going to start adding some things in over the next few weeks and see what's what....
